Smart Scraps Recipe - Pumpkin Burgers
Ferry Project is working in partnership with Cambridgeshire County Council's Waste Reduction Team by producing a series of seasonal recipes and videos for each month of the year, using some ingredients that may otherwise be wasted or thrown away, in versatile and creative ways - with very tasty results.

In October, we use so many pumpkins to celebrate Halloween. Have you ever actually tried eating one? Here is a different way of using up pumpkin - in a burger! (Great for vegetarians too!)

Pumpkin Burgers
400g pumpkin or butternut squash, peeled and diced
2 cloves garlic, peeled, whole
1 carrot, diced
1 red pepper cut in half
1 tbsp vegetable oil
½ tin cannellini beans
Fresh herbs
Red onion, grated
50g breadcrumbs
Pinch chilli flakes
1 tsp paprika
Salt and pepper
2 tbsp Oil for frying
Brioche buns for serving
Method
Heat the oven to 190C/ Gas Mark 5.
Place the pumpkin, garlic, carrot and red pepper on the baking sheet. Drizzle with oil. Roast for 15 to 20 minutes until soft. Or place in an airfryer for 10 minutes until soft.
Peel off the pepper skin. Place all the vegetables into a bowl.
Add the cannellini beans, herbs, red onion, breadcrumbs, spices and seasoning.
Mash until softened and mixed but with some chunks left for texture.
Heat a frying pan. Form the mixture into 6 burgers. Fry on each side for 3 to 4 minutes to brown and warm through. Serve in the brioche buns.
You can freeze the cannellini beans left for next time.
